In an effort to not only catalog previously attempted recipes, but also give a few hints, tips and anecdotes, here’s last week’s menu revisited!
On our last trip to Disney World, I picked up the Chef Mickey cookbook by Pam Brandon and the Disney Chefs. Not long after getting back from that trip, I made a variety of recipes from the book, but that was when I wasn’t posting much here on MATK. I returned to it recently and made this recipe for Chicken Asiago Pasta (page 124) for the second time and it was just as delicious this time around. The only change I made was using just parmesan instead of a mix of that and asiago.
This is a fairly simple one to put together, though it does involve dredging chunks of chicken and cooking them in some olive oil. But, that’s pretty much the hardest part. Right off the bat, I got the spinach in a bowl and combined the chopped sun dried tomatoes with the garlic and a combination of fresh olive oil and some of the stuff that the tomatoes came packed in. I also got the salted water going for the pasta at this point.
After that I cubed the chicken, got the flour mixed with salt and pepper and started the dredging/cooking process which didn’t take too long. I worked in batches to get the chicken done, but by the time I was finished, the pasta was all set to go too, so I got to mixing everything together in a big bowl.
That’s it, there’s your dinner. The flavors for this dish — which comes from the Disney’s All-Star Sports Resort — are just so amazing together. The noodles add some texture to bounce off of the bitterness of the spinach which is tempered by the tangy sun dried tomato flavors throughout. The cheese also helps bring everything together and add a salty note that connects a lot of the dots. I sometimes shy away from recipes that involve dredging and if our infant was having a really mad day, I probably would have skipped it, but this worked really well this time around.
As a kid growing up, BLTs were pretty common in our house. They were the good, solid kinds that featured your basic toasted bread, bacon, lettuce, tomato and mayo combination, most often served with some Campbell’s tomato soup. But, over the years I’ve started adding to that structure and think I’ve created some really special sandwiches that I wanted to tell you about.
The first major BLT change came for me when my wife introduced me to the idea of the BELT, that’s a BLT with a fried egg on top. As fried eggs and their runny goodness are a favorite of mine, that was a pretty easy sell. So was the inclusion of cheddar cheese, which makes just about everything better.
Recently I’ve been playing with a few ways to make all that even better which culminated in last night’s dinner, what I’m now calling Bangin’ BLTs. Last night’s sandwiches includes your B, your L and your T, but also the aforementioned fried egg, cheddar cheese (we’re big fans of the Hannaford Wisconsin sharp these days), homemade mayonnaise straight out of Ruhlman’s Twenty and either Tony Packo’s Sweet Hot Skinnies or Banana Peppers (the former for my wife, the latter for me).
Bangin’ BLT Ingredients
Bacon, 2-3 pieces per sandwich
3-4 Large Leaves of lettuce, I use romaine
1-2 Tomatoes, sliced
Eggs – 1 for each sandwich
Sliced cheddar cheese
Pickles, Banana Peppers
This meal might seem simple, but it actually has a lot of moving parts, so I’ll walk you through my process. I make the mayo first and follow Ruhlman’s recipe to the letter using vegetable oil and a farm fresh egg (we just happened to have a few on hand). This is the most intensive part of the process, but I guarantee the flavor you get from this will be far more full and rich than the stuff you buy at the store. This can be made days ahead, but the process only took me about 10 to 15 minutes and I went the hand-whisking route. In the future, I’d like to experiment with combining this mayonnaise with different elements like spicy sauces or fresh herbs.
Next I get my bacon in the oven. Sure, you can cook your bacon in a pan the traditional style, but I’m a big fan of using the oven because you don’t get splattered with hot grease and you don’t have to worry about it for 10 whole minutes. I set my oven for 400 degrees, then line a rimmed baking sheet with crumpled-up tin foil, this gives it more surface area to heat up. I then lay out as much bacon as I can fit, which wound up being about 7 or 8 pieces and popped it in the oven for 10 minutes. At that point I flipped the pieces over and let them cook for another 10 minutes.
With the bacon in the oven, I get to cleaning and cutting my vegetables. For the lettuce, I just pulled four large romaine leaves, sprayed them down and then ripped them into smaller, sandwich-sized pieces, discarding the hard white ribs in the process. Then I cleaned and sliced the tomatoes before slicing the banana pepper into strips for my sandwich (half of a large Tony Packo’s pepper did it for me) and getting out the Sweet Hot Skinnies for my wife. I also cut the cheese into squares.
At this point, it would behoove you to set up a solid sandwich-making station. I didn’t have the space for this, so it was a bit tricky, mostly because I had the toaster right in the middle of my work space. Once the bacon’s out of the oven and patted down, you’re almost ready to start making sandwiches.
Why almost? Because it’s egg time. This is where things can get a little tricky timing-wise because you want to work fast enough to make sure your bacon is still warm, but you’re also cooking eggs and toasting bread. I don’t worry so much about the bacon, so I basically put the bread in the toaster and then drop my egg in a small hot pan coated with cooking spray. By the time the toast is done, I’ve flipped my egg and it’s ready to go.
So, grab the bread and put on your desired about of homemade mayo. Then put cheese on one side (I’ve found that the extra sharp cheese can be a little overwhelming if you double up). I then put the hot egg right on top of the cheese and build up the other side with the bacon, tomato, lettuce and peppers/pickles. Bam, there’s your sandwich.
The richness of the homemade mayo works so well with the bacon, but do watch out because both can be on the salty side. When you mix in the crispiness of the lettuce, the coolness of the tomatoes, the sharpness of the cheese and the heat of the pickles or peppers, plus the egg doing it’s ooey gooey thing, you’ve got something really special happening in your face.
While I’m thinking about it, I do want to circle back around to the idea of serving BLTs with tomato soup. It’s an idea I still adore, but there was no way I was going to cook soup yesterday when it was in the 80s. However, a month or two ago I did make BLTs and tried a new tomato soup recipe I found on Smitten Kitchen. It was delightfully creamy and made for awesome dipping. Unfortunately, we lost most of the leftovers when our fridge fritzed out a month ago, but when things cool down, I’ll give it another try.
As I said in a recent post compiling various recently attempted recipes from the site Closet Cooking, I’ve tried a lot of recipes in the past several months and done very little posting, so it’s time to go through the images, write down my spotty memories and get these things out there into the internet where they will hopefully jog my memory later on and encourage other people to give them a try. This batch of three all come from the cooking site I’ve been following the longest: Smitten Kitchen!
I’m always interested in checking out a new recipe for tacos and this certainly fit the bill. I don’t think I’d ever made chicken ones before and the flavor on these were pretty solid if memory serves. I especially like the way you cook the chicken which is fairly hands-off and super easy. Combine all ingredients in a pan and boil for a half hour. This gives you plenty of time to chop up the rest of your taco fixins. I don’t quite remember why I didn’t make the salsa fresca that’s also mentioned in the post. Instead I whipped up a crema (sour cream combined with avocado, salt, oil, onion and some green Tabasco). One of these days I’d like to give this one a shot with bone-in chicken because I understand there’s more flavor there.
Apparently I only snapped a few pictures when I tried out this recipe. I remember this being a pretty easy thing to put together and the results being a kind of sausage-y, rabe-y mac and cheese and there’s nothing wrong with that. Actually, seeing this recipe again makes me want to give it another try in the next few weeks.
While I only snapped two pictures of the previous meal, I can’t seem to find a single image from either of the two times I made Pasta with White Beans (I skipped the rosemary oil because my wife is not a fan of that particular herb). Another easy meal to put together thanks to all the food processing, I really enjoyed the flavors combined for this recipe, but will note that all those beans can lead to some evenings punctuated by the most musical of fruits.
As any regular readers will know, it’s been a looooong time since I’ve posted here on Monkeying Around The Kitchen. Unfortunately, with work and all kinds of other things going one — raising our two year old and prepping for a new little baby — MATK can fall to the wayside. But, I’m still cooking almost every night which means I have a huge backlog of meals to talk about going back to last fall. So, in an effort to try and document the good recipes I’ve tried out in the last few months, I figured I’d implement a new kind of a post called Recipe Roundup that will gather a bunch of meals from different places, throw in a few pics and do my best to remember how they turned out.
Today’s subject is one of my favorite new cooking sites, Closet Cooking which is great because there’s tons of older recipes on there and the site gets updated constantly. I also appreciate that Kevin Lynch seems to be cooking in a kitchen even smaller than mine which is no small feat. Like anyone who tries a lot of different recipes, I’ve had a good deal of hits and misses lately. But, one of the absolute best hits I’ve come across in recent memory is actually a side dish: Smitten Kitchen’s Garlic Butter Roasted Mushrooms. As it happens, this is also one of the easiest things to put together. The only change I made was cutting out the capers because I forgot to buy them at the store. I also used some garlic butter because I had it around, if you do too, give that shot. You basically get all the ingredients together in a baking dish and throw them into a 450 degree oven for 20 minutes.
I figured that man can not live on mushrooms alone, so I also grilled up some steaks that happened to be on sale that week and steamed some asparagus. The dinner itself was pretty rad. I mean, you can’t really go wrong with a well cooked steak (I just spread some extra virgin olive oil on and sprinkle with salt and pepper before cooking on the cast iron grill pan). The real star, though, were the mushrooms. They’re just so perfectly earthy, rich and buttery with just a bit of acid from the lemon to tone the whole dish of goodness down just a bit.
Better than the dinner was the sandwich I made the next day. I had a red bell pepper in the fridge, so first off I sliced that and cooked it in some olive oil. After that, I sliced some of the steak and warmed that up in a pan with some of the mushrooms and the juice. When that was all warmed up, I placed it on some bread (that I spread some of the mushroom juice on too) with some rasped cheese and put all that on a foil covered pan under the broiler to melt the cheese. Once that was all done — I took it out when I saw the cheese getting melty — and then put some arugula on there and had myself a lunch I could eat four times a week given the resources. Man, I’m actually getting hungry thinking about this. Maybe it’s time to cut to the chase and make these sandwiches for dinner next week.
To save some cash, I’ve been trying to base my weekly menus off of what’s on sale at my preferred grocery store. A few weeks back my store had loin steak on sale so I went to Smitten Kitchen, threw it in the search and discovered her recipe for Steak Sandwiches.
The meal is super easy to put together. I whipped up the Mustard Mayo first and put it aside, then got to work on the steak and onions which were not only easy to cook (basically throw in a pan with some olive oil, salt and pepper), but only dirtied one pan! Once done, you cut your steak and lay out your spread — the arugala, two kinds of cheddar and the Mustard Mayo — and you’ve got dinner. I really enjoyed the simple combination of mayo and mustard. At some point in the future, I will attempt this with homemade mayo.
I also enjoyed the leftovers for this meal as you can see in the very last image. While I don’t usually go for sandwiches for dinner, I liked the simple and easy leftovers this preparation created. I basically recreated the sandwich, put it under the broiler for a few minutes and had a tasty and dynamic dish.
My parents’ house is directly behind a Chinese restaurant that we ordered from with some frequency. You might think with such easy access that I would have been well-versed in the country’s delicacies by an early age, but that wasn’t the case. Why? Because I only wanted to eat white rice with soy sauce. I don’t remember exactly how long this went on for, but definitely longer than someone who writes about food with some regularity would like to admit. Sometime in college or maybe high school I was turned on to the tastiness of Chinese carry food and have been hooked ever since.
Like a lot of people, I’m a big Sesame Chicken fan. I’ve even done some research into making the dish at home, especially with my growing wok experience. But, it’s a fairly complicated dish, if memory serves and, sometimes you just want to save a dish for nights when you’re not cooking, you know? But, I was intrigued when I saw the recipe for Crispy Sesame-Panko Chicken in my now-expired free Good Housekeeping subscription.
One of the best parts of this recipe is that, if you cook anything vaugley Asian on a semi-regular basis, you probably have the majority of the ingredients on hand. The only thing I bought for this was the cabbage. Everything else was in the pantry, fridge or freezer. It’s also pretty easy to put together.
The recipe says to get the chicken and oven ready first, but I didn’t go that way. I don’t have a lot of space to work with, so I try to tackle sides and condiments first. That meant that I whipped up the cabbage salad first. The main effort here comes from cutting up a cabbage. Once that’s done, throw it in a bow with green onion, sugar, vinegar, low sodium soy sauce, salt and pepper. I got that in the fridge to let everything mingle and then whipped up the simple ketchup serving sauce minus the cayenne. With those out of the way — literally — it was time for the chicken. First step: oven to 450 degrees.
Again, this isn’t a difficult process, but it did take some space. I like to use pie dishes for my egg wash/crumb chicken dishes. They’ve got the right surface area and higher sides so I don’t have to worry about spilling grossness all over my counter. Dip the fat-trimmed chicken breasts in the egg/garlic powder/dry mustard/ginger/pepper mix then into the panko/sesame seed crumblies before placing on a baking sheet (I went foil-covered as usual). Those go into the 450 degree oven for 15-20 minutes and get nice and crunchy. That’s enough time to get your slaw and sauce together if you were so inclined, but I’d rather do my work up front and have a little relaxation time while the oven does its job.
The chicken doesn’t have that sugary, stickiness I’ve come to know and love from Sesame Chicken, but it does remind my tongue and brain enough to hit some of the right buttons, maybe not as hard as the real deal, but enough for a tasty dish. The slaw was nice and tangy, the kind of thing you could slow together for any Asian main dish (man, it’d be good on tacos!). The ketchup also added a really nice tangy element to the party. Altogether I’d say this is a good way to go for a solid meal that might open up the door to more Asian-inspired entrees in the future. I bet even my younger self would have passed up the white rice/soy sauce combo to give this a shot.
I recently started one food related project that spawned another. We’ve got stacks of magazine laying around that are chock full of useful recipes. I decided to clear some space and also add to my Big Blue Binder, so I started cutting out pages. That lead me to restructuring said binder because it was just a big hodge podge with no order. I’ve since re-organized and even gotten dividers. I feel so efficient!
Anyway, one of the recipes I came across during this process was Good Housekeeping’s Chicken Gyro Salad which fit in well with my criteria for meals these days: try not to make too much heat. This one only required the cooking of the chicken and some peppers which wasn’t too bad and a good deal of chopping.
Aside from the pita chips, I followed the recipe pretty strictly. Instead of using an outdoor grill, though, I went with an iron skillet on our stove. I got the dressing together first and marinated the chicken for the prescribed 15 minutes. While chicken absorbed that goodness, I got the peppers and other vegetables cut up. The peppers met the heat first followed by the chicken. The rest was pretty simple.
I enjoyed this recipe because there was a lot of flavors I already enjoy going in. Since it’s not lamb, it’s not a real gyro, but it’s a pretty good alternative that captures many of the flavors.
I do want to mention one idea I had while chopping olives, though. We have this egg slicer thing that you can see in the pictures. I rarely use it because I don’t really like hard boiled eggs. But, while chopping tiny olives, I realized we had this thing in our drawer of miscellany and made good use of it! So, if you’ve got a spare egg chopper and need to cut whole olives into sliced ones, think outside the box!
As I said in a few posts this week, it’s been hot in New York for a while, or at least it was for a while there. I tried coming up with salads and other meals that wouldn’t overheat the house or myself during prep. As I usually do when I have a vague cooking idea, I went over to SmittenKitchen.com and looked around for various salads. Her recipe for Caesar Salad sounded really interesting, especially because of the brined boneless chicken breasts used. I’m a big fan of Caesar when it comes to the salad family, that dressing is just so in line with what my taste buds love being slathered in, so I decided to give it a shot. Smitten’s recipe for the actual dressing can be found here. I didn’t see anything specific about the croutons, so I did a search on FoodNetwork.com and decided to go with Tyler Florence’s take.
This meal wound up taking more time to get together than I anticipated, but it wound up being well worth the time and energy. The first thing I got together was the brine for the chicken breasts. I’ve brined pork chops and our Thanksgiving turkey, so I was intrigued with the idea of going that route for simple chicken breasts.
Those stayed in the fridge for 15 minutes which gave me time to get the croutons and dressing together. The croutons were pretty simple. After setting your oven for 350 degrees, you rip up half your loaf of bread — I got a focaccia from the grocery store — and mix that up with some olive oil, Parmesan cheese and fresh ground black pepper. Then spread that mixture on a (foil-covered) baking sheet and let the oven do its thing for 15 minutes. These guys came out so cheesey and crunchy that I could have eaten them as snacks. In fact, I did while waiting for everything to come together.
The dressing was a pretty simple measure-and-whisk operation. I took the easy way out going the mayonnaise and no anchovy route. For some reason, this version didn’t taste right to me in the beginning, but I ran it by my wife — a fellow fan of the Caesar salad — and she was happy with it, so I let it hang out in the fridge as I took out the chicken and got to work with that.
I cooked the breasts for about 7 minutes per side in one of our non-stick pans. I added some salt and pepper, the former of which was silly considering I had just brined them in salt water. Anyway, while those cooked, I cut up the lettuce and got that in the serving bowl along with the croutons. Once the breasts were done, I chopped them up, tossed them in the bowl and was ready to serve.
I’ve said this before in regards to making tomato sauce and perogies, but there’s just something far more satisfying about eating a complicated and/or time-consuming dish that you make with your own hands. Now, Caesar Salad is nowhere near as complex as those other two, but when you consider the fact that you can drive to pretty much any sandwich shop, diner or fast food place and get this meal in about 10 minutes, it does give a bit of a different perspective and far more appreciation for your food. So, yes, this was a good Caesar salad. The brined chicken had so much more flavor that I’m thinking about using this preparation whenever I have the extra time for dinner. Also, as I’ve mentioned several times already, Tyler Florence’s croutons were to die for. All mixed together, this was a dish that I will definitely be making again, hopefully with some farm fresh ingredients in the not too distant future.
For the second half of last week and part of this week, my wife, daughter and I spent some nice time in Michigan hanging out with my parents at their cottage. We ate a lot of food on the grill which I forgot to snap pictures of, but there was one meal I absolutely, positively needed to let the world know about and that’s the pizza from Devil’s Lake’s Luigi’s Pizza. I almost wrote that it’s the one and only pizza joint up there, but it’s been a long time since I was a regular and don’t know that for sure. I do know that for a long time as a kid, it was one of the few food options that offered carry out food you could run up and get in your bathing suit and not get funny looks. It also happens that it was my favorite pizza before I moved out to New York.
Above you can see my favorite pie from them, the Deluxe which includes pepperoni, ham, sausage, onions, green peppers, mushrooms and black olives and, before moving to New York. I feel like it used to include green olives at one point, but memories get fuzzy. The beauty of this pie is just how much they cram on there. You can get deluxe-type pizzas a lot of places and this one probably isn’t super special as far as toppings go, but the key to Luigi’s greatness is the crust. The crusts on these pies have a garlucy, salty quality that made this the only crust I bothered eating for a long, long time.
We also got a Hawaiian pie which featured pineapple, ham, green peppers and extra cheese which we tried to get with bacon instead of ham (highly recommended), but they were swamped leading into Fourth of July and didn’t get the custom portion of the order. Still, this is a solid, delightful Hawaiian pizza, which is something you can’t always get easily in my area. The extra cheese really makes this pop. Man, it would have been rad with bacon.
Anyway, if you’re in the Manitou Beach, Michigan area and haven’t tried Luigi’s go do it. If you’re somehow driving through (it’s not exactly close to any highways, which is by design as you might imagine) get over there and try some of this goodness.
While flipping through Nigella Kitchen by Nigella Lawson I was absolutely drawn to her Vietnamese Pork Noodle Soup recipe (page 82). So far under the spell was I that I ignored two very basic facts: 1) our two-year-old doesn’t do so well with soup and 2) it was just starting to get crazy hot when I made it. Ah well, it turned out to be super good, so who cares? I’d rather sweat through making a really great dish that I can use again later down the line than make one that’s not so good any day.
Like a lot of the dishes I’ve made out of Stir-Frying To The Sky’s Edge, there’s a lot of prep work involved here. You cut the pork tenderloin up and then mix it with lime, soy sauce, paprika and fish sauce. While that marinates for about 15 minutes, you can cut up the bok choy, start the pasta water and get the other ingredients ready. I couldn’t find the sprouts and skipped the chiles, so there were a few things I didn’t have to deal with.
Then you’re off to the cooking races. The chicken broth goes in its own pot while you start cooking scallions and then the pork. I used a regular pan this time, but think I’ll go with the wok next time just to see how the process differs. Anyway, there’s more cooking and then transferring of ingredients until you wind up with a pot of noodle-y, porky, boy choy-y soup just begging to be eaten.
If you couldn’t tell, I really enjoyed this dish. The tenderloin took on great flavor even with such a short marinade and the broth had that great saltiness to it that actually made me excited to eat leftovers the next few days. I will definitely make this dish again, but most likely when it’s a bit cooler outside.
Have I talked about my Big Blue Binder before? That’s where I keep all the recipes I find in various magazines that I want to try. I’ve got that mystery subscription to Good Housekeeping that I’m considering renewing as I type. I also get the free mag Hannaford gives out called Fresh. I go through those, rip out pages, shove them into clear sleeves and get to them when I get to them. At some point I must have gone through one of my wife’s issues of Martha Stewart Living and came across a page with four different pasta recipes including one for Fusilli Carbonara With Frisee & Lemon.
The whole recipe for this dish fits on a quarter of a sheet, so it’s pretty simple. Get your water going, cook the bacon, mix the eggs and parmesan cheese, clean the frisee and juice the lemons. The greens go in a bowl, the bacon cools and de-greases on some paper towels until you can break it up. Once the pasta’s done, drop that into another bowl and mix with the egg and cheese mixture. Once that’s together stir in the lemon juice, mix again and combine with the bacon and greens.
I actually remember the very first person who ever made carbonara for me: my friend Geof’s dad. They lived around the corner from us and Geof and I became friends after they moved to the neighborhood in third or fourth grade. We spent countless summer days hanging out together along with his older sister and younger brother and I had the pleasure of spending many a wonderful dinner at their house. One of those meals was carbonara, a traditional Italian dish of pasta, bacon and eggs where the eggs are poured over the pasta right after its done, cooking them upon contact.
This version of carbonara has a few more bells and whistles — and isn’t nearly as good as Geof’s dad’s if memory serves — but it made for a really nice dinner. Our two-year-old daughter has developed a real taste for macaroni and cheese (or “macos and cheese” as she calls it) so anything with pasta and cheese ranks pretty high on her list of favorite foods. You add in bacon, another favorite, and this turned out to be a real hit with everyone.
Every time I see a new meal recipe pop up on Smitten Kitchen, I get excited. When I saw her post about Japanese Vegetable Pancakes, I got jazzed and added it to that week’s menu because it looked new and different yet I could tell that I’d be able to find most of the ingredients at the grocery store.
You’ll need cabbage, kale, carrots and a few other things and you basically just slice them up into strips. Throw all that in a bowl with some flour and six eggs and start forming patties. After my failed attempt at making veggie burgers recently (which turned into a successful veggie has), I was worried that my pancakes wouldn’t come out, but luckily everything stuck together. I broke out two different pans to make the process go a bit faster and flipped/took them off the heat when they got a good shade of blackish brown.
The other key element to this dish is the Tangy Sauce which was FAN-tastic. I’ll probably get to a post about the Sesame Chicken Breasts I made around the same time. There was a similar, spicy ketchup based sauce with that, but it turned out a lot spicier than we like. Smitten’s, though, was fantastic. Tangy, sweet, salty, all the good things in one. The only problem? We ran out of sauce well before we ran out of pancakes.
My wife and I both really fell for this dish. To frame it properly, I would go to the fridge and eat these as snacks right out of the bowl, dipping in the sauce when we still had some. That’s how much I was into this recipe. It’s definitely going in the regular rotation, such as it is.
When I first started cooking, I was really big on following the recipes to the letter. My wife, who’s been cooking much longer would razz me about this a bit, but I took the same approach to cooking that I’ve read about comic book editors gave to new artists: do it a very specific way until you get the craft down, then branch out and do what you want. In the case of comic artists, they were often given a set number of panels to work with per page. For my cooking, I stuck super close to the recipes.
Now that I’ve been playing with food and recipes for a while, though, I feel like I can play around a little more. It’s good that I have that confidence now because my attempt to make Food Network’s recipe for Veggie Burgers With Mushrooms wound up not working out quite as planned. I don’t quite remember why my veggie burgers didn’t hold together. The only real swap-out I made was to use Panko crumbs instead of regular bread ones. Could that have had something to do with it?
Anyway, after making the patties and starting to cook them in the pan, I realized that these guys were not going to stick together. So, I broke down the burgers and cooked the whole thing as a kind of stir fry or hash, adding a little more Worcestershire AND low sodium soy sauce to boost the flavor.
For dinner that night, we ate it as is, but my wife suggested eating them with eggs, like a breakfast dish. I didn’t feel like cooking up some eggs at that point, but I did remember the idea the next morning and had myself a nice breakfast of sunny side up eggs and veggie hash. I gotta say, the eggs really brought the whole thing together and made for a much more interesting and tasty dish than it was as a plain old dinner.
I can’t believe this picture is almost a month old at this point. Sorry about the lack of posts the past few weeks, hoping to get back on the horse. Anyway, even though I had this fantastic plate of Fiddlestix food on St. Patrick’s Day, I can still remember how fantastic it was. If memory serves you’ve got corned beef, braised cabbage, mashed potatoes (possibly with horseradish?) and Irish soda bread that was quickly cooked or warmed on the stove. I can’t remember exactly how it was prepared, but there was something special about the corn beef. Maybe it had Guinness involved? I think that might have been it. Anyway, this is what I think of when I think of amazing corned beef. I’d love to see this meal on the regular menu which is made all the better by that delightfully crisp soda bread!
As regular readers of the blog might have realized by this point, I cook a lot more than I actually write about food. As it happens, Monkeying Around The Kitchen gets pushed to the wayside when I get swamped with work or just don’t feel like sitting under the computer any more, but I still make time to cook about five times a week. I keep a folder on my desktop of images organized as best I can, but even with so many images and saved recipes, I can’t always remember how the things I cooked turned out, especially if I few a few somewhat similar things within a short period of time. That’s the case with these two recipes I’m talking about now, Sage-Garlic-Brined Pork Chops from Rhulman’s Twenty (page 29) and Food Network’s Pork Chops With Roasted Kale and Walnut Pesto.
Above you can see the brined chops. I remember putting that brine together, frying them and that picture sure looks pretty, but I just can’t remember what they tasted like. I want to say I liked them because, well, I love lemon and capers but I can’t say for sure. Around this time I also made some parmesan pork chops that were incredibly tasty. I think that memory might have knocked this one out of my brain.
Meanwhile, there wasn’t anything particularly wrong with the Food Network recipe, but the chops themselves weren’t particularly interesting. You’re just cooking them in oil with some salt, pepper and rosemary sprinkled around. They weren’t bad by any means, just not overly memorable. However, I was a fan of the kale and walnut pesto recipe included therein. I love how versatile pesto turns out to be and enjoy trying new takes on the classic. I don’t remember eating these as leftovers, but I do remember combining the rest of the pesto with some leftover pasta that I whipped up one day and wound up having a nice little lunch for myself.
Hudson Valley Restaurant Week is a wonderful event held in and around the area I live in in New York where all participating restaurants offer a set menu for lunch and/or dinner with three or four options for a three course meal. While looking around for things to do last weekend while my parents visited and coming up with zero events, I stumbled upon the fact that we were right in the middle of Restaurant Week again. I did some looking around and saw that a place in New Paltz called Barnaby’s Steakhouse was on the list and happened to be offering a pretty impressive line-up of appetizers, entrees and desserts for the $20.95 price tag. I scoped out a few other places, but decided on Barnaby’s not only because we’d never been there before, but also because it seemed like the most bang for the bucks. We headed up there on Saturday for a late lunch and man, was it a wonderful experience.
I started off with the the Lobster Bisque partially because it sounded like the most intriguing of the appetizers on the list, but also because I figured it was the best value. The bisque itself had that wonderful richness that you get from the best bisques, but it also had a cream swirled throughout as a sweet corn and tarragon relish that really added a depth of flavor that made me want to dive into a vat of this and eat my way out.
We all wound up going for the Grilled Petit Filet Mignon Steak for our entrees that came topped with “a crust of Gorgonzola cheese & herbed horseradish” that also came with mashed potatoes and creamed spinach. The steak came perfectly cooked to medium and I probably could have cut through it with a fork. The gorgonzola and horseradish topping was a nice touch that didn’t overwhelm the solid flavors of the steak. The potatoes were good, clearly made in house and creamy, though I always compare these things with the ones my mom makes and they don’t hold up. I wasn’t into the creamed spinach, but that’s okay, I was already pretty full at this point. Of course, it wasn’t over yet.
I went with the Creme Brulee for desert and kind of regret it, not because it wasn’t good, but because I wound up being uncomfortably full the rest of the day. Also, even though I figured I wouldn’t worry about calories after eating such rich food, I did add everything up as best I could and was shocked at how many calories this dish added to the meal. If my rough calculations are correct it’s actually more calories than the steak! Anyway, the caramelized sugar was perfectly done and the creme was super nice and creamy.
I’m not that best at comparing meals in my head. If I like one, I remember liking it, but it doesn’t enter a ranking system or anything like that. But, I can tell when a meal really rockets past all the other ones and this was definitely one of those experiences. Aside from the one time I went to Peter Luger’s, I think this might be the best steak I’ve ever had in New York. It’s probably up there with the best steak experiences ever. Plus, it was all the better because I was with my family AND it was my mom’s first time eating a steak after years and years of being a vegetarian. There’s a lot of reasons she’s moving away from that, but I think the high quality of the food at Barnaby’s helped kickstart the process even more!
Sausage is quickly becoming one of the top three types of protein I’m frequenting of late. You’ve got chicken breasts, sirloin (usually for grinding) and then the sweet Italian sausage sold at my grocery store (I’ve got to look for a way to make this stuff at home). I really love how sausage works with pasta and have been trying lots of recipes that include both ingredients. When I was flipping through my Blue Binder of recipes torn out of magazines or printed out from the days of old, I came across one from Good Housekeeping called Sausage & Mushroom Penne. I decided to go with a different kind of pasta, but otherwise I followed it as written, going with arugala instead of kale for what it’s worth.
As has been the theme with many of the recipes I’ve written about lately, this one also happens to be pretty simple. You get the water going for the pasta and then get to work on the other stuff. First the sausage goes in, then the onion followed by the mushrooms. Once all that’s cooked and the pasta’s done, you combine the two, stir in the arugala, some pasta water and you’ve got yourself a nice dinner. You could mix up the greens or go with different kinds of sausage to suit this recipe to your specific tastes which is always fun.
By the way, sorry about some of the fuzzier pictures above. I’ve been having a few problems with the Kitchen Camera, but think I’ve got it figure out. Hopefully they’ll look better moving forwards.
A while back I found myself wanting to try some London Broil along with a nice salad, so I took to my copy of Ruhlman’s Twenty, looked around and came out with a pair of recipes to try. First off, I found Rip’s Own Marinade For London Broil (or Flank Steak) on page 294. This recipe combines the meat with soy sauce, ketchup, brown sugar, garlic, Worcestershire sauce, ginger and onion powder and lets it all get to know each other in a bag or dish for several hours. I also came across his Warm Arugala Salad With Back & Poached Eggs on page 283 which, just from title alone, sounded delightful.
While the marinade wound up being not exactly what we were looking for — it’s been a while, but I think it turned out a little sweeter than my wife or I tend to like — I’m a big fan of this salad and think it could work either on its own or as a side dish to a less protein heavy main course. Plus, the salad is super-simple to put together. The only real work involves making the making, cooking a few eggs over easy and making a really simple vinegar-based dressing. It wound up being kind of like a breakfast salad with the combination of bacon and eggs, but the slightly bitter arugala also got in on the action, making this easy side stand out even more.
I’ve made a lot of different kinds of chili and even though I really enjoyed Pat Neelys the first time I made it, there’s always more variations to try out there in the world. While looking through many a Giada De Laurentiis recipe on Food Network’s website (many of which I wrote about last week), I came across her White Bean & Chicken Chili which is so different from what I’ve tried in the past, I just had to give it a shot. In fact, I’ve actually cooked this dish twice since stumbling across it and it’s been a hit both times.
As will be the case for the foreseeable future, I started this recipe by freezing the meat for about an hour, then trimming and cubing it and running the pieces through my meat grinder. I still haven’t looked at the numbers to see if this is cheaper than buying store-ground meat, but it makes me feel better knowing that I did it myself. Plus, my grocery store tends to run pretty good sales on chicken breasts that I take advantage of whenever it makes sense.
From there, this recipe is pretty simple. You cut up some onion and garlic, gather a small pile of spices, drain and rinse off your beans and prepare the Swiss chard. I went with white both times I made it, though I don’t see why red wouldn’t work just as well.
The results after 50 or so minutes of simmering is a dish that tastes both new and familiar. The ground chicken and chard bring their unique flavors into the mix while the corn and spice combination reminds you of the chilies you’ve had and loved in the past. I’d actually be interested in experimenting with ways that make this even more Italian-tasting. Maybe mix up some of the spices and herbs and incorporate some tomatoes. Could be fun to play with.
Sometimes you’re just so excited to jump into a new cookbook that you don’t fully read the recipe correctly. That’s what happened with me and Nigella Lawson’s Nigella Kitchen. I came across her recipe for Turkey Meatballs In Tomato Sauce (page 44) and was immediately interested. When I noticed a note towards the end that suggested making her Arugala & Lemon Couscous (page 90) I started making that as well without fully reading that paragraph or really thinking much about what I was doing. What Lawson suggests in that graph is serving the prepared meatballs and sauce over the couscous, not in addition to. The way I did it, we wound up having a lot of pasta in one meal, but that’s okay every now and then.
One of the most interesting aspects of this sauce recipe was a method Lawson uses where you blend celery and onion into a paste and use that in the sauce instead of the usual diced or chopped variety. This seems like a good way to do this that saves on a little prep time and makes for a less chunky sauce (if that’s what you’re going for). I think I’m going to try this the next time I make Smitten Kitchen’s Tomato Sauce With Onion and Butter, which just so happens to be on the menu tonight!
From there you’ve got pretty standard sauce and meatball-making techniques (this is the first time I used my Kitchenaid meat grinder attachment for turkey, but it worked great). Another aspect of this recipe that I like is that you don’t bake the meatballs or cook them on the stove, you just put them all in the sauce while it simmers on the stove top. One thing that did surprise me about the recipe and I think made for a weaker sauce than I usually like is that it calls for a can of water. That seems like a missed opportunity for something that could add more flavor. I think next time I make this recipes I’ll use tomato sauce or V8 juice or something along those lines to bolster the sauce a bit.
The couscous is super easy to make. You get some chicken broth boiling and while cooking the couscous in another pot in some olive oil. Once the broth is boiling you pour it over the couscous, cover and let sit for ten minutes off the heat. Once that’s done you throw it in a bowl with some arugala along with lemon zest, lemon juice and some salt and pepper. This makes for a nice, clean, zingy side dish.
My wife and I both agreed that the meal would have been close to perfect had I forgotten about the pasta (it was too late in the process when I realized how much starch I was preparing) and just served the sauce and meatballs over the couscous. Since everything was on the same plate, they wound up mixing and the citrus-y zest of the couscous played very well off of the tomato sauce and turkey.
Sometimes a goof in the kitchen can lead to some good results. A few weeks back I intended to make a recipe I found in Hannaford’s Fresh magazine that they give you for free if you spend a certain amount of money. It was going to be the simple Spinach Rice Pilaf Pie, but I wound up accidentally reading the wrong recipe’s ingredients (which I strangely had most of in my pantry). I only realized this after I drained a can of black olives and chickpeas for the other recipe. Even though those two things weren’t included in the original recipe I wanted to make, I worked them in and think the results were pretty solid.
I made this work by adding the olives and chickpeas to the egg/cheese mix that you incorporate the cooked spinach/rice mixture after that’s all cooked. I should have also baked this new, bigger mixture in a larger container of some kind. As such, I had a little spillage in the stove and it took a little longer to cook, but otherwise, I thought the added chickpeas and olives made the flavor a lot more interesting in this dish. Give it a whirl and see how it works for you!
I’ve found the two most satisfying meals are the simple ones done really well and the complex ones also done really well. When I made my first batch of pierogies, they took forever but tasted really amazing (didn’t have nearly the same amount of luck the second time around). I experienced the former last week when I tried a pair of recipes in a cookbook we got when we got married called The William-Sonoma Bride & Groom Cookbook. I set out to make Grilled T-Bones With Garlic Butter (page 97) and Tuscan Farro (page 190), but wound up making a porterhouse because that’s what I could find at my grocery store and Tuscan Rice because I have no idea what farro is and looking it up on Wikipedia did not help find it at my local grocery store. It didn’t matter much, this turned out to be a wonderful meal.
The only thing I didn’t prep in enough time was the garlic butter, which I didn’t have down to room temperature when I started. I made up for this by putting the butter on a plate on the stove while I made the other ingredients and had a pretty good amount of luck with that. To the mushy butter, I added four chopped cloves of garlic, some thyme and then a few dashes of Worcestershire and green Tobasco sauce. The recipe says to roll it up in a piece of plastic wrap, but I had zero luck with that and just kind of morphed it as best I could. Didn’t matter, it was still nice and herby.
For the Tuscan Rice, I started off by getting the rice going and then cleaning the broccoli rabe, tossing it with some salt and olive oil and then grilling them on a pair of cast iron grill pans. I’m sure grilling on an actual grill would have gotten better results, but I still thought it went pretty well. Once those were done, I moved the rabe to a bowl and let it cool before chopping. To that I added some more olive oil and red wine vinegar and the rice once it was done cooking.
Between taking the rabe off the grill and the rice being done, I grilled the porterhouse. I actually bought two pretty good sized steaks, but after pulling out the larger one and applying some olive oil, salt, pepper and thyme, I realized that it would probably be enough for my wife and I. I froze the other one for a later date. Anyway, I warmed the larger cast iron to near screaming and then put the steak on. I cooked it for four minutes on one side and five on the other. I tested it with my fingers to make sure it came in at medium.
Boom, it worked out great. The steaks were cooked perfectly, the garlic butter was nice and garlic buttery and the Tuscan Rice was interesting. I’d never had broccoli rabe before and was surprised with the sharp horseradish-like flavor it had. I even warmed it up the next day for another side and it worked well that way too.
